A moist, rich cake with a beautiful deep colour on the inside.

Ingredients:

Cake:

  • 2 ¼ cup all purpose flour
  • 3 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • ¾ cup sugar (or 1 cup sugar for a sweeter cake)
  • ¾ cup brown sugar
  • 1 cup canola oil
  • 3 eggs
  • 2 cups carrots, grated

Icing:

  • 1 package cream cheese (8 oz or 250 grams)
  • ¼ cup butter, softened
  • ½ tsp vanilla
  • 1 cup icing sugar

 

Directions:

Step 1:  The Cake:

  1. Preheat oven to 350°F.

 

  1. In a mixing bowl, combine the eggs and oil with a handheld mixer on medium to high speed.

 

  1. Add all dry ingredients except the carrots and mix on medium to high speed.

 

  1. Add the carrots and mix on medium speed.

 

  1. Pour the batter into a greased cake pan, ensuring that it is no more than ⅔ full.

 

  1. Bake in the oven for 35 to 45 minutes.

 

  1. Let cool.

 

Step 2:  The Icing

  1. In a mixing bowl, add the cream cheese and smooth out with a handheld electric mixer.

 

  1. Add the remaining ingredients to make the icing and combine with the mixer.

 

  1. Add the icing to a piping bag to decorate the carrot cake or spread directly on to the cake with a spatula.

 

  1. Lightly sprinkle the icing with nutmeg if desired.
