A moist, rich cake with a beautiful deep colour on the inside.
Ingredients:
Cake:
- 2 ¼ cup all purpose flour
- 3 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp salt
- ¾ cup sugar (or 1 cup sugar for a sweeter cake)
- ¾ cup brown sugar
- 1 cup canola oil
- 3 eggs
- 2 cups carrots, grated
Icing:
- 1 package cream cheese (8 oz or 250 grams)
- ¼ cup butter, softened
- ½ tsp vanilla
- 1 cup icing sugar
Directions:
Step 1: The Cake:
- Preheat oven to 350°F.
- In a mixing bowl, combine the eggs and oil with a handheld mixer on medium to high speed.
- Add all dry ingredients except the carrots and mix on medium to high speed.
- Add the carrots and mix on medium speed.
- Pour the batter into a greased cake pan, ensuring that it is no more than ⅔ full.
- Bake in the oven for 35 to 45 minutes.
- Let cool.
Step 2: The Icing
- In a mixing bowl, add the cream cheese and smooth out with a handheld electric mixer.
- Add the remaining ingredients to make the icing and combine with the mixer.
- Add the icing to a piping bag to decorate the carrot cake or spread directly on to the cake with a spatula.
- Lightly sprinkle the icing with nutmeg if desired.
