This is a great appetizer or side dish for lunch or dinner.
Yield: 18 fritters
Ingredients:
- 2 cups grated carrots
- ¼ cup flour
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp baking powder
- 1 egg
- Canola oil to fry
Directions:
- Heat oil in a medium sized frying pan on medium heat.
- In a large bowl, combine all ingredients.
- Take 1 tablespoon of the carrot mixture, shape by flattening slightly and then place in the frying pan.
- Cook one side and flip to cook the other side ensuring not to burn the fritter. Note: the fritters cook quickly.
- Remove each fritter and place on a paper towel lined tray to absorb the excess oil.
