This is a great appetizer or side dish for lunch or dinner.

Yield:  18 fritters

Ingredients:

  • 2 cups grated carrots
  • ¼ cup flour
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp baking powder
  • 1 egg
  • Canola oil to fry

 

Directions:

  1. Heat oil in a medium sized frying pan on medium heat.

 

  1. In a large bowl, combine all ingredients.

 

  1. Take 1 tablespoon of the carrot mixture, shape by flattening slightly and then place in the frying pan.

 

  1. Cook one side and flip to cook the other side ensuring not to burn the fritter. Note:  the fritters cook quickly.

 

  1. Remove each fritter and place on a paper towel lined tray to absorb the excess oil.
