A popular meal to enjoy with family and friends. There are also so many ways to change it up with toppings of your choice.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 3 tbsp oil
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ¼ tsp red chili powder
  • ½ tsp black pepper
  • 2 tsp garlic purée
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 onion
  • Oil
  • Salt
  • 6 to 8 tortillas
  • Salsa
  • Shredded cheddar cheese

 

Directions:

  1. In a mixing bowl, combine the oil, salt, paprika, ground coriander, ground cumin, red chili powder, black pepper and garlic purée to create a marinade.

 

  1. Add the chicken to the mixing bowl and let marinate for at least 30 minutes. If the chicken breasts are large, fillet them so that they cook properly.

 

  1. Heat the barbeque or a grill pan over medium heat and add the chicken. Cook both sides.

 

  1. Separately, heat oil in a frying pan or wok and sauté the sliced veggies. Add salt and pepper to taste.

 

  1. Slice the cooked chicken into thin strips and serve on a platter with the sautéed veggies.
