A popular meal to enjoy with family and friends. There are also so many ways to change it up with toppings of your choice.
Ingredients:
- 2 boneless, skinless chicken breasts
- 3 tbsp oil
- ½ tsp salt
- ½ tsp paprika
- ½ tsp ground coriander
- ½ tsp ground cumin
- ¼ tsp red chili powder
- ½ tsp black pepper
- 2 tsp garlic purée
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1 onion
- Oil
- Salt
- 6 to 8 tortillas
- Salsa
- Shredded cheddar cheese
Directions:
- In a mixing bowl, combine the oil, salt, paprika, ground coriander, ground cumin, red chili powder, black pepper and garlic purée to create a marinade.
- Add the chicken to the mixing bowl and let marinate for at least 30 minutes. If the chicken breasts are large, fillet them so that they cook properly.
- Heat the barbeque or a grill pan over medium heat and add the chicken. Cook both sides.
- Separately, heat oil in a frying pan or wok and sauté the sliced veggies. Add salt and pepper to taste.
- Slice the cooked chicken into thin strips and serve on a platter with the sautéed veggies.
