Forget Chinese take-out!  Ultimate comfort food served in minutes.  Spice it up with a side of Sambal or Sriracha.

Ingredients:

  • 1 ¼ cup rice, Jasmine or Basmati
  • 1 boneless, skinless chicken breast cut into bite size pieces
  • 2 tbsp canola oil
  • 2 tsp garlic puree
  • 1 ½ cups pea and carrot frozen mix
  • ½ cup diced onion
  • 1 egg, scrambled
  • 1 ½ tsp sesame oil
  • ¼ tsp black pepper
  • 2 tbsp soy sauce
  • 4 chopped green onion

 

Directions:

  1. Cook the rice (or use leftover rice.)

 

  1. In a wok, heat oil over medium heat.

 

  1. Add garlic puree and stir to separate the garlic.

 

  1. Add the chicken pieces and sauté until cooked.

 

  1. Add the onions and stir to combine.

 

  1. Once the onions have softened, add the frozen peas and carrots and stir to combine.

 

  1. Add the rice and stir to combine. Continue to sauté for a couple of minutes.

 

  1. Add the scrambled egg and stir to combine.

 

  1. Add the soy sauce, sesame oil and black pepper and stir to combine. Add another ½ tbsp. soy sauce if you would prefer a little more flavour.

 

  1. Add the chopped green onion and stir to combine.
