Forget Chinese take-out! Ultimate comfort food served in minutes. Spice it up with a side of Sambal or Sriracha.
Ingredients:
- 1 ¼ cup rice, Jasmine or Basmati
- 1 boneless, skinless chicken breast cut into bite size pieces
- 2 tbsp canola oil
- 2 tsp garlic puree
- 1 ½ cups pea and carrot frozen mix
- ½ cup diced onion
- 1 egg, scrambled
- 1 ½ tsp sesame oil
- ¼ tsp black pepper
- 2 tbsp soy sauce
- 4 chopped green onion
Directions:
- Cook the rice (or use leftover rice.)
- In a wok, heat oil over medium heat.
- Add garlic puree and stir to separate the garlic.
- Add the chicken pieces and sauté until cooked.
- Add the onions and stir to combine.
- Once the onions have softened, add the frozen peas and carrots and stir to combine.
- Add the rice and stir to combine. Continue to sauté for a couple of minutes.
- Add the scrambled egg and stir to combine.
- Add the soy sauce, sesame oil and black pepper and stir to combine. Add another ½ tbsp. soy sauce if you would prefer a little more flavour.
- Add the chopped green onion and stir to combine.
