I created this unique and delicious recipe on a cold winter evening.  There is something very comforting about the smoothness of coconut milk coming together in this flavourful soup.

Ingredients:

  • 6 cups water
  • 2 chicken stock cubes
  • 4 cups chopped cabbage
  • 1 can coconut milk
  • ¼ tsp turmeric
  • 1 lime, freshly squeezed.
  • ¼ cup freshly chopped cilantro

 

Directions:

  1. In a large saucepan, over medium heat, add water and bring to a boil.

 

  1. Add the chicken stock cubes and stir periodically to dissolve.

 

  1. Add the chopped cabbage and cover. Cook until the cabbage has softened, about 10 to 15 minutes.

 

  1. Add the coconut milk and stir to combine.

 

  1. Add the turmeric and stir to combine.

 

  1. Once the broth is boiling, turn off heat.

 

  1. Add freshly squeezed lime juice from one lime and the freshly chopped cilantro and stir to combine.
