A light, colourful salad changes it up from routine greens.
Yield: 2 to 4 servings
Ingredients:
- 1 can corn (341 ml or 12 fl oz)
- ½ a container cherry or grape tomatoes (125 grams)
- ¼ cup diced English Cucumber (about ½ cup when cut into pieces)
- ½ cup diced red onion
- 2 tbsp freshly chopped cilantro
- ½ lime freshly squeezed
- Salt
Directions:
- Drain and rinse the corn and place into a large bowl.
- Cut the tomatoes in half lengthwise and place into the bowl.
- Add the diced cucumber, red onion, cilantro, lime juice and salt to taste into the bowl and combine all ingredients.
