A light, colourful salad changes it up from routine greens.

Yield:    2 to 4 servings

Ingredients:

  • 1 can corn (341 ml or 12 fl oz)
  • ½ a container cherry or grape tomatoes (125 grams)
  • ¼ cup diced English Cucumber (about ½ cup when cut into pieces)
  • ½ cup diced red onion
  • 2 tbsp freshly chopped cilantro
  • ½ lime freshly squeezed
  • Salt

 

Directions:

  1. Drain and rinse the corn and place into a large bowl.

 

  1. Cut the tomatoes in half lengthwise and place into the bowl.

 

  1. Add the diced cucumber, red onion, cilantro, lime juice and salt to taste into the bowl and combine all ingredients.
