A refreshing dessert best served during those hot summer days.  This impressive dessert is ready in minutes!

Ingredients:

  • Graham crust
  • 3 egg yokes
  • 1 can (300 ml) condensed milk
  • ½ cup freshly squeezed lime juice
  • 2 tsp lime rind
  • Whip cream to decorate

Directions:

  1. Preheat the oven to 350°

 

  1. Prepare the graham crust in a 5 to 6 inch round cake pan and set aside.

 

  1. In a mixing bowl, add the yokes and whisk with an electric mixer.

 

  1. Add the condensed milk and whisk together with the mixer.

 

  1. Add the lime juice and whisk together with the mixer.

 

  1. Add 1 tsp lime rind and stir to combine.

 

  1. Pour the mixture over the graham crust.

 

  1. Place the cake pan in the oven and bake for 10 minutes.

 

  1. Remove the pie from the oven and let cool.

 

  1. Place in the fridge to chill.

 

  1. Before serving, decorate with the remaining lime rind and whip cream.
