Ingredients:
- Graham crust
- 3 egg yokes
- 1 can (300 ml) condensed milk
- ½ cup freshly squeezed lime juice
- 2 tsp lime rind
- Whip cream to decorate
Directions:
- Preheat the oven to 350°
- Prepare the graham crust in a 5 to 6 inch round cake pan and set aside.
- In a mixing bowl, add the yokes and whisk with an electric mixer.
- Add the condensed milk and whisk together with the mixer.
- Add the lime juice and whisk together with the mixer.
- Add 1 tsp lime rind and stir to combine.
- Pour the mixture over the graham crust.
- Place the cake pan in the oven and bake for 10 minutes.
- Remove the pie from the oven and let cool.
- Place in the fridge to chill.
- Before serving, decorate with the remaining lime rind and whip cream.
