This cheesecake is smooth, delicious and simple to make. I decorate this cheesecake with whip cream on top which adds the perfect flavor and texture to this dessert. I usually sprinkle lemon rind on top of the whip cream to add colour and flavor.
Ingredients:
- 2 packages cream cheese (8 oz or 250 mg)
- ½ cup sugar
- 1 tsp vanilla
- 2 eggs
- 2 tbsp freshly squeezed lemon juice
- ¼ tsp grated lemon rind
- Graham crust
Directions:
- Preheat oven to 350°F.
- Prepare the graham crust.
- In a mixing bowl, beat the cream cheese with an electric mixer on medium speed to smooth it out.
- Add sugar and vanilla to the bowl and continue to beat on medium speed.
- Add the lemon juice and lemon rind and continue to beat on medium speed.
- Add the eggs and beat on medium speed until smooth and blended together.
- Pour the mixture into the crust and bake for 35 to 40 minutes.
- Let cool before decorating and store in the fridge.
