This cheesecake is smooth, delicious and simple to make.   I decorate this cheesecake with whip cream on top which adds the perfect flavor and texture to this dessert.  I usually sprinkle lemon rind on top of the whip cream to add colour and flavor.

Ingredients:

  • 2 packages cream cheese (8 oz or 250 mg)
  • ½ cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 tbsp freshly squeezed lemon juice
  • ¼ tsp grated lemon rind
  • Graham crust

 

Directions:

  1. Preheat oven to 350°F.

 

  1. Prepare the graham crust.

 

  1. In a mixing bowl, beat the cream cheese with an electric mixer on medium speed to smooth it out.

 

  1. Add sugar and vanilla to the bowl and continue to beat on medium speed.

 

  1. Add the lemon juice and lemon rind and continue to beat on medium speed.

 

  1. Add the eggs and beat on medium speed until smooth and blended together.

 

  1. Pour the mixture into the crust and bake for 35 to 40 minutes.

 

  1. Let cool before decorating and store in the fridge.
