I love baking these muffins on the weekend. They fill the air with that delicious just out of the oven aroma and I usually have the ingredients on hand.
Ingredients:
- ½ cup sugar
- 1 egg
- ¼ cup canola oil
- ½ tsp salt
- 2 tsp vanilla
- 2 tsp baking powder
- 1 ¾ cup flour
- ½ cup milk
- 1 cup chopped strawberries
Directions:
- Preheat oven to 375°F and line a muffin pan with 8 paper liners.
- In a mixing bowl, combine the sugar and egg and beat with an electric mixer.
- Add the oil and continue to mix.
- Add the salt, vanilla and baking powder and mix.
- Add the flour and milk and mix.
- Add the strawberries and use a spoon to mix together.
- Fill the muffin cups with the batter.
- Bake for 20 to 25 minutes.
