I love baking these muffins on the weekend. They fill the air with that delicious just out of the oven aroma and I usually have the ingredients on hand.

Ingredients:

  • ½ cup sugar
  • 1 egg
  • ¼ cup canola oil
  • ½ tsp salt
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 1 ¾ cup flour
  • ½ cup milk
  • 1 cup chopped strawberries

 

Directions:

  1. Preheat oven to 375°F and line a muffin pan with 8 paper liners.

 

  1. In a mixing bowl, combine the sugar and egg and beat with an electric mixer.

 

  1. Add the oil and continue to mix.

 

  1. Add the salt, vanilla and baking powder and mix.

 

  1. Add the flour and milk and mix.

 

  1. Add the strawberries and use a spoon to mix together.

 

  1. Fill the muffin cups with the batter.

 

  1. Bake for 20 to 25 minutes.
