Smooth homemade goodness that tastes so good spread on anything…and even when you lick it off the spoon!  I bet you never thought it was this easy.  Get creative and add 1 tablespoon coconut oil and/or ½ teaspoon vanilla after the nut butter has formed for a flavour boost!

Ingredients:

  • 2 cups cashews, unsalted
  • Salt to taste (optional)

 

Directions:

  1. Preheat oven to 350°

 

  1. Spread the cashews in single layer on a baking sheet.

 

  1. Bake the cashews for 12 minutes.

 

  1. Add the cashews to the blender or food processor and blend for 10 minutes, stopping periodically to scrape the nut mixture down the sides to ensure it continues to blend.
    Note:  My food processor pushes all the nuts to the side and doesn’t accomplish much for me.  I prefer using a blender or bullet for this recipe.

 

  1. Once the butter has been formed, add salt to taste if desired and blend for another 30 seconds. Note:  I don’t add salt but it’s based on personal preference.

 

  1. Transfer to a jar or airtight container and store in the fridge.
