Aiming for an easy but hearty and delicious meal?  Meatloaf is the answer!  I usually serve meatloaf with a side of mashed potatoes, veggies such as green beans or carrots and a salad.

Ingredients:

  • 450 grams lean ground beef
  • ½ cup diced onion (1 small onion)
  • ½ cup diced celery (2 celery stalks)
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 tbsp garlic puree
  • 1 egg
  • ½ cup bread crumbs
  • ½ cup tomato sauce
  • ¼ cup freshly chopped cilantro

 

Directions:

  1. Preheat oven to 375°

 

  1. In a mixing bowl, combine all ingredients.

 

  1. Lightly coat a 5” x 9” non-stick loaf pan with canola oil spray.

 

  1. Spread the ground beef evenly into the loaf pan.

 

  1. Place the loaf pan in the oven for 30 to 40 minutes or until cooked.
