This recipe will yield 12 latkes which I am quite sure will not last more than 5 minutes after serving.  My husband is always left wanting more!  Whether you like latkes served with sour cream, applesauce or straight up, they make the perfect appetizer for any event whether you are Jewish or not!

Ingredients

  • 4 cups grated potatoes
  • ½ cup finely chopped onion
  • 1/3 cup flour
  • 1 ¼ tsp salt
  • ½ tsp black pepper
  • 1 egg
  • Canola oil to fry

 

Directions:

  1. In a mixing bowl, combine all ingredients.

 

  1. In a large skillet, heat oil over medium heat.

 

  1. Take ¼ cup of the potato mixture at a time into your hands and squeeze out the liquid. Then form into a round shape and place into the hot oil.

 

  1. Once golden brown, flip to cook the other side.

 

  1. Once cooked on both sides, use a slotted spoon to remove the latke from the oil and place on a paper towel lined tray to absorb the excess oil.
