This shrimp is delicious served as an appetizer and can be served with a sweet chili sauce if desired. It can also be served with a salad, tossed with pasta or served as a meal with side dishes such as rice and veggies.
Yield: 20 to 25 shrimp
Ingredients:
- 2 tbsp oil
- 1 tsp freshly pureed garlic
- 20 to 25 shrimp, deveined and peeled (fresh or frozen)
- 1 tbsp freshly squeezed lemon juice
- Freshly squeezed lemon juice to spritz before serving
- Lemon wedges for serving
Directions:
- Thaw shrimp if using frozen shrimp.
- Clean/rinse shrimp with water and set aside.
- In a medium or large saucepan, heat oil on medium heat.
- Add garlic and spread around oil with a cooking spoon.
- Add the shrimp and sauté in oil.
- When the shrimp is about half cooked, add the lemon juice and continue to sauté. The shrimp will turn pinkish-red once cooked.
- Add salt to taste.
- Remove from heat and serve with lemon wedges. Squeeze lemon juice over shrimp before serving.
