The combination of tomatoes and goat cheese provides the perfect flavour burst.  I often skip balsamic vinegar and fresh basil when cooking on a weeknight but amp it up with these ingredients if I’m cooking for company.

Ingredients:

  • Grape, cherry or heirloom tomatoes
  • Goat cheese, crumbled
  • Salt to taste
  • Olive oil to drizzle
  • Balsamic vinegar to drizzle (optional, if using then don’t add salt)
  • Chopped Basil (optional)

 

Directions:

  1. Cut tomatoes widthwise and place in a large bowl or platter.

 

  1. Crumble goat cheese and sprinkle on the tomatoes.

 

  1. Drizzle olive oil.

 

  1. Either sprinkle salt to taste or drizzle balsamic vinegar.

 

  1. Sprinkle freshly chopped basil if using.
