The combination of tomatoes and goat cheese provides the perfect flavour burst. I often skip balsamic vinegar and fresh basil when cooking on a weeknight but amp it up with these ingredients if I’m cooking for company.
Ingredients:
- Grape, cherry or heirloom tomatoes
- Goat cheese, crumbled
- Salt to taste
- Olive oil to drizzle
- Balsamic vinegar to drizzle (optional, if using then don’t add salt)
- Chopped Basil (optional)
Directions:
- Cut tomatoes widthwise and place in a large bowl or platter.
- Crumble goat cheese and sprinkle on the tomatoes.
- Drizzle olive oil.
- Either sprinkle salt to taste or drizzle balsamic vinegar.
- Sprinkle freshly chopped basil if using.
