I bought a waffle iron years ago while pregnant with my son with a picture-perfect image in my mind of homemade waffles with syrup and smiles.  Admittedly, that didn’t happen until years later because it’s not like your kid pops out and is ready to enjoy your efforts in the kitchen!  Who knew?  I definitely had enough time to perfect my homemade waffle recipe that pairs well with berries and maple syrup…or a few chocolate chips sprinkled into the batter for an extra treat.

Ingredients:

  • 2 eggs
  • 2 tbsp sugar
  • 1 ½ cup milk
  • ¼ cup butter, melted
  • 1 tsp vanilla
  • ½ tsp salt
  • 4 tsp baking powder
  • 2 cups flour

 

Directions:

  1. Preheat waffle iron.

 

  1. In a mixing bowl, beat eggs and sugar together.

 

  1. Add the remaining ingredients and combine to create a smooth batter.

 

  1. Spray the preheated waffle iron with non-stick cooking spray.

 

  1. Spoon batter into the waffle maker and remove once cooked.
