I created this unique and delicious recipe on a cold winter evening. There is something very comforting about the smoothness of coconut milk coming together in this flavourful soup.
Ingredients:
- 6 cups water
- 2 chicken stock cubes
- 4 cups chopped cabbage
- 1 can coconut milk
- ¼ tsp turmeric
- 1 lime, freshly squeezed.
- ¼ cup freshly chopped cilantro
Directions:
- In a large saucepan, over medium heat, add water and bring to a boil.
- Add the chicken stock cubes and stir periodically to dissolve.
- Add the chopped cabbage and cover. Cook until the cabbage has softened, about 10 to 15 minutes.
- Add the coconut milk and stir to combine.
- Add the turmeric and stir to combine.
- Once the broth is boiling, turn off heat.
- Add freshly squeezed lime juice from one lime and the freshly chopped cilantro and stir to combine.
