My grandmother often made this for my brother and me but I had no idea how easy it was to cook until years later when I asked her. I was skeptical at first but I should never have doubted her. She knew her way around the kitchen better than I ever will.
Yield: 4 servings
Ingredients:
- 3 boneless, skinless chicken breasts
- ⅓ cup soy sauce
- ¾ cup bread crumbs
- Canola oil to fry
Directions:
- In a medium to large size frying pan, heat oil on medium heat.
- Cut each chicken breast into 3-4 equal size pieces. If shallow frying then butterfly cut the chicken breast for faster and easier cooking.
- In one bowl, add soy sauce and in another bowl, add the bread crumbs.
- Dip one chicken piece at a time into the soy sauce and then into the bread crumbs ensuring even coating. Then place the chicken piece into the oil to cook. Note: Do not leave the chicken pieces in the soy sauce for more than a few seconds or the chicken will taste too salty.
- Once the chicken pieces are cooked, remove from the oil and place on a paper towel lined tray to absorb the excess oil.
