My grandmother often made this for my brother and me but I had no idea how easy it was to cook until years later when I asked her.  I was skeptical at first but I should never have doubted her.  She knew her way around the kitchen better than I ever will.

Yield:    4 servings

Ingredients:

  • 3 boneless, skinless chicken breasts
  • ⅓ cup soy sauce
  • ¾ cup bread crumbs
  • Canola oil to fry

 

Directions:

  1. In a medium to large size frying pan, heat oil on medium heat.

 

  1. Cut each chicken breast into 3-4 equal size pieces. If shallow frying then butterfly cut the chicken breast for faster and easier cooking.

 

  1. In one bowl, add soy sauce and in another bowl, add the bread crumbs.

 

  1. Dip one chicken piece at a time into the soy sauce and then into the bread crumbs ensuring even coating. Then place the chicken piece into the oil to cook.  Note:  Do not leave the chicken pieces in the soy sauce for more than a few seconds or the chicken will taste too salty.

 

  1. Once the chicken pieces are cooked, remove from the oil and place on a paper towel lined tray to absorb the excess oil.
