There are some days that I know will inevitably be brutal ones such as those days when my schedule has me dealing with difficult people, attending a stressful proceeding or when I’m slammed with back-to-back meetings which are made worse by the dark, cold winter days in Toronto.  Waltzing into my home at the end of a tiring day with a comforting, delicious aroma filling the air and dinner ready and waiting for me immediately lift my spirits!

Admittedly, I was concerned about cooking with a crockpot when I first bought one a few years ago.  How could I leave a cooking appliance on for hours while nobody was at home?  As a personal injury lawyer, I have become extremely anxious about all potential hazards which irritates my family and results in a lot of eye rolling in response to my concerns.  I decided to try using the crockpot for the first time while I was home,  just in case something went wrong.  That was probably the worst thing I could have done because I couldn’t stop checking it and started eating the veggies before they were cooked. The entire house smelled so damn good and I couldn’t resist.

My favourite crockpot recipe which will be posted soon is beef roast with potatoes, carrots, onions and celery.  I throw all the ingredients into the crockpot in the morning before I leave for work, set the timer for 7 hours and come home to a perfect meal. I usually turn the crockpot on for another 30 minutes when I get home to heat the food.  By the time the table is set and everyone is ready to eat, dinner is served!
